Cauliflower, Honey Parantas
Parantas are a flatbread stuffed with many savory ingredients. This recipe is a sweet and tasty Cauliflower, Honey and Garlic combination and make the most delicious mouthwatering Parantas you have ever tasted. I hope you will give it a try!
Ingredients
Filling:
- 4 cups finely chopped cauliflower
- 1 tablespoon salt
- 1 tablespoon powdered mango
- 1 tablespoon coriander
- 1/4 cup chopped chives
- 1/4 cup chopped cilantro
- 1/3 cup oil
- 15 garlic cloves thinly sliced
- 1/2 cup liquid honey
Parantas:
- 4 cups Atta flour
- 1 1/2 cups warm water
- 1/2 cup oil
- spray oil
Method

Prep all the ingredients this will help to make sure you have everything you need and to make things move faster. Add the chives, cilantro, mango powder, salt and coriander to the finely chopped cauliflower; set aside.

Using a small saucepan add the oil and the garlic. Sauté together on medium heat till the garlic turns a light golden color. Remove from the heat and add the honey. Place back onto the stove and cook for another 4 minutes, be sure to stir and not allow to burn. After 4 minutes remove from heat and allow to cool down.

Now, lets make the dough. Add 3 cups of Atta flour to a medium size bowl. Add in the oil and mix till well blended.

You c an use your hands to incorporate the oil. Now, add the water and mix.

Using your hands knead the dough in the bowl. If the dough is to sticky add some spray oil to your hands and continue to knead.

Knead the dough till well mixed and all the lumps are removed. Spray the top of the dough with spray oil.

Cover the dough with plastic wrap and place into the refrigerator for about an hour. If you want to do that longer you can. Check the honey mixture and see if it has cooled to warm. If so, add to the cauliflower mixer and mix; cover with plastic wrap and set aside.

Take a large pot with a lid and place a dish cloth on the bottom and then add some foil. This is where your going to put the Parantas after cooking to keep warm.

After the dough has sat for an hour, place the remaining flour on a large plate. Take a little of that flour and sprinkle on a flat surface.

Remove the dough from the bowl and sprinkle a little more flour on top. Take a pastry scrapper and cut the dough into 12 pieces.

Heat your griddle or cast iron fry pan allow to get good and hot. Spray some Pam or ghee on top.

Take a piece of dough and roll into a ball. Place onto a floured surface and sprinkle more flour on to. Because the dough will still be sticky.

Roll out into a 5-6 inch circle. Spoon on a heaping tablespoon on cauliflower into the middle.

Bring up the sides of the dough and pinch closed. Using your hands pat the dough back into a 5-6 inch circle.

Using a large flipper scoop up the parantas and place onto the hot griddle. Spray the top with some oil or ghee. Allow to cook for 4 minutes then flip and continue to cook.
You want the Parantas to have a golden color. Place into the pot and cover. Continue with each piece of dough till they are all cooked.
