This bread really kicks the cinnamon bun up a notch. Slice it like a pie and serve warm, your guests will be delighted and amazed at the beauty of this bread. A real eye catcher!

Ingredients

Dough:

  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1/2 cup butter
  • 2 1/2 teaspoons instant yeast
  • 1 egg (beaten)
  • 3 1/2 cups bread flour
  • 1 1/2 teaspoons salt
  • 1 cup dried cranberries
  • 1 cup chopped walnuts

Filling:

  • 1/4 cup butter
  • 1/2 cup sugar
  • 2 teaspoon cinnamon
  • 1 egg yolk
  • 1 tablespoon milk

Method

Prep all your ingredients ahead of time. This will help to make things move fast and to make sure you have everything you need. Use a saucepan add the water, milk and butter; heat till butter is melted.

Add the milk mixture into a bowl or stand mixer bowl. Allow to cool to 110F then add the sugar and mix till the sugar is dissolved.

Add in 2 cups of flour and mix till smooth. Add in the beaten egg, salt and instant yeast. Mix till well combined.

Continue to add the rest of the flour and knead for 6-8 minutes. The dough will become smooth and elastic. Spray the dough with a oil spray.

Cover with plastic wrap and allow to rest till double in bulk, about 1 - 1 1/2 hours. Once the dough has risen, sprinkle a little flour on a flat surface.

Pour out the dough and start to add the cranberries and the walnuts.Kneed until the cranberries and walnuts are well distributed throughout.

Sprinkle a little more flour on the table and place the dough on top. Flatten a little and cover with plastic wrap for 25 minutes.

Roll out the dough into a 12 x 16 rectangle. Spread the butter on top with your fingers.

Sprinkle the sugar on top and the cinnamon.

Mix the sugar and cinnamon together. Using a ruler and a pizza cutter. Cut the dough into 1 inch slices.

Once you have sliced the dough, roll up the middle piece like a cinnamon bun.

Place the first rolled dough onto a lightly greased 11 1/2 inch flan pan. Now, take each piece of dough and continue to place around the first rolled piece of dough, till all the slices of dough is used and the pan is full.

Cover with plastic wrap and allow to rest for 25 minutes. Mix the egg yolk and the milk and brush the top of the bread. bake in a 375F oven for 30 -35 minutes. Remove from the oven and cool on a wire rack.
