Green Tea Pistachio Soda Bread
For something different and interesting give this Green Tea Pistachio Soda Bread a try. I love the color of both the Matcha and the Pistachio's in this bread. The bread has a wonderful texture and the crunch of the Pistachios with each bite. Served in a cast iron skillet gives this bread a real homey feeling.
Ingredients
Dough:
- 2 cups pastry flour
- 2 cups all-purpose flour
- 4 teaspoons matcha
- 1 tablespoon baking soda
- 1 teaspoon baking powder
- 2/3 cup sugar
- 1/2 cup vegetable shortening (cold)
- 1 egg (beaten)
- 1 1/2 cups butter milk
- 1 cup pistachios (chopped)
Egg Wash:
- 1 egg white
- 3 tablespoons water
Method

Prep all the ingredients, this will help you and make things move faster. Get a zip lock bag and place the shelled pistachio's and using a rolling pin crush the nuts.

In a large bowl and the all-purpose flour and the pastry flour. Add in the sugar, matcha, baking soda and baking powder.

Using a wire whisk mix all the dried ingredients together till well blended. Add in the cold shortening.

Using your fingers mix the shortening and the flour mixture till you get a crumbled mixture. Add in the chopped pistachio's and mix.

Create a well in the middle of the dry ingredients, add in the beaten egg and the butter milk.

Mix with a wooden spoon till just combined. Sprinkle a little flour onto a flat surface.

Pour out the mixture and knead just a few time, you don't want to over knead this bread or it will become tough. Shape and place into a 9 inch cast iron skillet or onto a cookie sheet.
Mix in a small bowl 1 egg white and 3 tablespoons of water and brush the top of the bread. Bake in a preheated 425F oven for 50 - 55 minutes. Remove from pan and place on a wire rack, place a towel over the bread till cooled.
