  • 1/3 cup raisins
  • Biscuits
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 tablespoons cold shortening
  • 3 tablespoons cold butter
  • 1 grated granny smith apple
  • 2/3 cup cold milk

Filling

  • 2 tablespoons soft butter
  • 4 tablespoons apple butter
  • 1/4 cup brown sugar
  • 1/4 cup raisins

Method

Grease your muffin tins with a little shortening and set aside. In a small bowl combine 1/4 cup honey, 1/4 cup brown sugar and 2 tablespoons melted butter. Mix together till well blended.

Place an equal amount into the bottom of each muffin tin. It should work out to about 2 teaspoons in each. Now, sprinkle the 1/3 cup of raisins equally into each muffin tin; set aside.

Make the filling for the biscuits by adding the 2 tablespoons of soft butter, 4 tablespoons of apple butter, 1/4 cup of packed brown sugar and a 1/4 cup of raisins into a small bowl and mix together; set aside. To make the biscuits make sure everything is cold. In a bowl combine the flour, baking powder, salt, cinnamon together and stir with a whisk.

Use a pastry cutter, cut in the shortening and butter till they become small pea size chunks. Grate the granny smith apple peel and all. Squeeze out the juice and add the apple to the mixture.

Add in the milk.Mix together till the dough comes to a ball. Pour out onto a lightly floured surface and knead just till it all comes together. Roll dough out to a 10 x 8 inch rectangle. Spread out the filling on top.

Roll the dough, starting on the long side. Like a jelly roll. Cut into 12 pieces.

Place the slices into the muffin tins. Bake in a 400 degree oven for 20 to 25 minutes, or till golden brown. Allow to cool for 1 minutes then remove from tin. Serve warm.
