100% Whole Wheat with Buckwheat Honey Bread Class

Here's a whole wheat bread that gives fantastic results every time you won't have to give up taste for healthy eating anymore. I have used this bread recipe may times Great for sandwiches, toast or served fresh out of the oven with a slab of butter. Give it a try.

Ingredients

  • 1 ¾ cup lukewarm milk
  • ¼ cup butter (melted)
  • 3 tablespoons olive oil
  • ¼ cup buckwheat honey
  • 1 large egg beaten
  • 4 teaspoons instant yeast
  • 5-5½ cups whole wheat flour
  • 2 teaspoons salt

Method

In a saucepan scald milk (do not bring to a boil).

Pour liquid into a large bowl. Allow the liquid to cool to lukewarm about 110 to 115 degrees.

Add melted butter and olive oil to the lukewarm milk.

Continue to add buckwheat honey (can substitute any honey that you have available). Using wooden spoon mix together till well blended.

Add 2 1/2 cups of whole wheat flour and mix until smooth (about 2 minutes).

Mix in salt. After well blended add in yeast and blend together. Then allow mixture to rest for 20 minutes uncovered.

After 20 minutes stir in beaten egg. Add another cup of flour and stir.

Sprinkle 1/2 cup of whole wheat flour on a flat surface. Pour dough onto flour.

Sprinkle flour on top of dough and knead for 8-10 minutes adding more flour as needed.

Dough should become smooth soft and elastic. Add 2 tablespoons of oil to the bottom of a large bowl.

Place dough into oiled bowl, turn dough to cover all sides. Cover with plastic wrap. Allow to proof for 1 1/2 hours or till double in bulk.

After dough has risen pour out on to flat surface. Using a dough scraper or knife cut dough in half.

With finger tips flatten dough into a rectangle (this will help to degas the dough). Roll dough like a jelly roll make sure you press seam after each roll.

Pinch the last seam closed using finger tips. Repeat with other half. Place into 2 greased 4.5 x 8.5 loaf pans seam side down. Cover with plastic wrap and allow to double in size. Bake in a preheated oven for 30 - 35 minutes or until golden and sounds hollow when tapped on bottom. Remove from pans and cool on wire rack.
