Fruity Gingerbread Bread or Muffin Jar

Make sure you have a sterilized 1 quart or 1 liter jar. With a good lid.

Dry Ingredients:

• Pour 1 cup of chopped nuts into the bottom of the jar
• Add 1/2 cup of dark raisins
• Add 1/2 cup of dried chopped apricots
• Add 1/2 cup of dried cranberries pack well
• Add 1/2 cup of sugar
• In a bowl add 2 teaspoons of baking powder, 3/4 teaspoon ground ginger, 1/4 teaspoon of salt, 1/4 teaspoon baking soda and 1/4 teaspoon of cinnamon mix together.
• Add the flour mixture to the jar.
• Clean the top of the jar and place the lid on.
• Decorate the jar as you like.

To make the Fruity Gingerbread Bread or Muffins follow this recipe

Wet Ingredients:

• 1 jar of Fruity Gingerbread Mix
• 1/2 cup milk
• 1/3 cup oil
• 1/4 cup of light molasses
• 1 large egg

Method:

Preheat oven to 375F. Grease a large loaf pan or 12 muffin cups. Pour the jar out into a large bowl. In another bowl add all the liquid ingredients and mix together. Add the liquid to the dry ingredients and mix with a wooden spoon. Do not over mix. Pour batter into the loaf pan or muffin cups. Bake the muffins for 15-18 minute or bake the loaf for 30-35 minutes or until a knife inserted into the center comes out clean. Remove from pan and cool on a wire rack.
