
In a bowl cream together sugar and shortening. Mix in one egg at a time and blend in. Add mashed bananas. In another bowl combine barley flour, rice flour, baking powder and salt. Fold in dry ingredients to the banana mixture. Do not over mix. Add pecans. Pour batter into a greased large bread pan. Bake 350F oven for 60 minutes. Allow to cool for 15 minutes before removing from pan. Cool on a wire rack.
