Banana Bread Pudding Recipe:

Ingredients

  • 1/4 cup butter (melted)
  • 4 cups cubed stale french bread
  • 3 large eggs (beaten)
  • 1/2 cup sugar
  • 2 cups milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 teaspoon vanilla
  • 1 cup sliced banana

Sauce:

  • 3 tablespoons butter
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 3/4 cup milk
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla

Method

Place cubed bread into a large bowl. Pour melted butter over bread and mix. In another bowl combine eggs, sugar, milk, cinnamon, nutmeg, salt and vanilla. Mix together. place bread cubes into a glass casserole container. Pour in liquid mixture. Stir in sliced bananas. place in a pre-heated 375 F oven for 40-50 minutes.

Sauce:
Melt the butter in a saucepan. Add sugar, cornstarch, milk, corn syrup and vanilla. Cook over medium heat, stirring occasionally, until sauce comes to a full boil. Then boil for 1 minute. place sauce in a bowl and serve on the side with the warm bread pudding.
