Apple Cheddar Walnut Focaccia Bread Recipe: Makes 1 loaf

Ingredients

  • 2 teaspoons butter
  • 1/2 cup onion,chopped
  • 4 McIntosh apples, peeled, cored, quartered and sliced 1/4 thick
  • 1/3 cup dried cherries
  • 2 tablespoons brown sugar
  • 1 teaspoons apple cider vinegar
  • 1 10oz tube refrigerated pizza dough
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 cup cheddar, finely shredded
  • 1 tablespoon parsley, chopped fresh

Method

Preheat oven to 375 F. Lightly grease a large baking sheet. Over medium heat in a large saucepan, melt butter. Add onion, saute for 3 minutes. Add apples and cherries, saute an additional 2 minutes. Stir together brown sugar and vinegar and add to saucepan, gently stirring apple mixture until coated. Reduce heat to low and cook 2-3 minutes until apples are tender and liquid has thickened. Unroll pizza dough on prepared sheet, pressing it into a 10 x12 rectangle. Spread apple mixture evenly over dough. Sprinkle walnuts, then cheddar cheese. Sprinkle with chopped parsley. Bake 16-18 minutes until a golden color. Cool 5 minutes on sheet, then cut into squares and serve. Makes 12 servings.
