Cheese Garlic Herb Bread Recipe: Makes 1 loaf

Ingredients

  • 1 package active dry yeast
  • 1/4 cup lukewarm water
  • 1 cup low-fat cottage cheese
  • 1 large egg, lightly beaten
  • 2 tablespoons chopped fresh basil
  • 1 heaping tablespoon finely chopped, oil-packed, sun-dried tomatoes
  • 1 tablespoon olive oil
  • 2 teaspoon granulated sugar
  • 2 large cloves garlic, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon baking soda
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons grated Parmesan cheese

Method

Pour lukewarm water into a bowl. Sprinkle yeast on top and set a side for 5 - 10 minute. Using a saucepan warm cottage cheese over low heat, for 5 minutes. In a bowl; add egg, basil, sun-dried tomatoes, olive oil, sugar, garlic, salt, pepper and baking powder. Mix yeast and add to bowl. Mix flour and parmesan together. Add 1 cup at a time to the liquid mixture. Place dough on a lightly floured surface and knead for 5 minutes. Place into a greased bowl. Being sure to grease all sides of the dough. Cover with plastic wrap and place in a warm spot. Let dough rise to double in size, about 1 hour. Punch down dough and knead for a few minutes. Place dough into a greased loaf pan or casserole dish. Cover once again with plastic wrap and rise till double, about 30 minutes. Bake at 350F for 35-40 minutes till golden brown. Place on wire rack and cool.
