
Grate the zucchini and place into a colander and sprinkle 3 tsp of salt. Mix zucchini with your hand. Allow zucchini to drain in sink for 20 min. Rinse zucchini and dry with paper towel. Mix flour, yeast, salt, pepper and cheese in a large bowl. Add the oil and zucchini. Mix thoroughly. Add 2 cups of warm water. to create a firm but sticky dough. Knead for 10 minutes. Place into a greased bowl with olive oil. Cover with cling wrap till double. Punch down cut in half and place into greased bread pans or flowerpots. Cover allow to double. Glaze dough with milk and top with poppy seeds. Bake in a pre-heated 400 F oven for 35-40 min.
