Cracked Wheat Sourdough Bread Recipe: Makes 2 loaves

Ingredients

For the sponge:

  • 1 cup unbleached flour
  • 1 cup lukewarm water
  • 2 tablespoons potato flakes
  • 2 tablespoon honey

For the rest of the recipe:

  • 2 cups starter
  • 1 teaspoon salt
  • 1/2 cup honey
  • 1/2 cup oil
  • 1 1/2 cups potato water
  • 6 cups unbleached flour
  • 1/4 cup wheat germ
  • 1/4 cup cracked wheat
  • 1/4 cup oatmeal

Method

Starter

To make the starter add the cup of flour, lukewarm water, potato flakes and honey. Mix all together and let sit out for 8 - 12 hours. Afterwards save 2 cups and place the rest in the refrigerator for use in another recipe.



Dough

Mix all the ingredients till smooth; place on the counter and knead for 10 minutes. Form a smooth ball and place into a greased bowl. Cover with a damp cloth and let rise for 8 - 12 hours. Punch down and form two loaves. Place into 2 greased loaf pans and allow to rise for 3-4 hours. Place into a cold oven and bake at 300 degrees for 1 hour.
