Prune Braided Bread Recipe: Makes 1 loaf

Ingredients

  • 3/4 cup lukewarm water
  • 1 teaspoon sugar
  • 2 packages yeast
  • 2 eggs
  • 1/3 cup sugar
  • 2/3 teaspoon salt
  • 4 1/2 cups flour
  • 1 1/3 cup butter

Filling

  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 tablespoon vinegar
  • 2/3 cup chopped cooked prunes
  • 1 1/3 cups chopped apples
  • 2/3 cup brown sugar
  • 1/2 cup water

Method

Combine the water, teaspoon of sugar and yeast. Let yeast mixture stand for 10 minutes. In a large bowl combine 2 well beaten eggs, 1/3 cup sugar, 2/3 teaspoon salt, flour and butter. Make a well in the middle of flour, add egg mixture. Cut in butter. Add yeast mixture. Knead well. Cover with damp cloth. Chill for 2 hours. Divide dough in half, roll to a 9x14 rectangle. Transfer to greased baking sheet. Slash sides. Add filling to centre and braid slashes sides. Let rise for 30 minutes. Bake for 30 minutes at 350 degrees.

 

To make the filling, mix all ingredients, then boil until thick. Cool
