San Francisco Sourdough 2 Recipe: Makes 2 loaves

Ingredients

  • 4 1/2 cup bread flour
  • 3 tablespoons sugar
  • 2 1/2 teaspoons salt
  • 1 package quick dry yeast
  • 1 cup warm milk
  • 2 tablespoons butter
  • 1 1/2 cups sourdough starter
  • 1 egg
  • 1 tablespoon water

Method

Place 1 cup flour, the sugar, salt, and yeast into a large bowl. Place milk and butter into a saucepan and heat to 100 F. Add starter to flour mixture and stir. Add the warm milk and butter mixture. Mix in 3 1/2 cups of flour, one cup at a time. Place onto a lightly floured surface and knead for 10 min. Place into a greased bowl and cover till double in bulk. Punch down . and let rest for 15 minutes. Shape into two loaves. Place onto a greased cookie sheet, cover till double. Brush egg wash on top of bread. With a sharp knife slash the top of the bread. Place into a 375 F oven. Bake for 30 - 35 minutes. Cool on a wire rack.
