Flax Sourdough Bread Recipe: Makes 2 loaves

Ingredients

  • 2 cups active sourdough (starter)
  • 2 tablespoons sunflower seeds
  • 1/4 cup flax seeds
  • 1 tablespoon poppy seeds
  • 4-5 cups white, unbleached flour
  • 1/2 cup flax flour or flax meal
  • 1 1/4 cups cold water
  • 1/2 tablespoon salt
  • 1/4 cup olive oil
  • 1/4 cup honey

Method

Get yourself a dry skillet and place it on the stove on med heat. Place the flax seeds, poppy seeds and sunflower seeds in the skillet. Be sure to stir the seeds frequently, until they become fragrant. DO NOT let them burn. Once done place them on a plate and let them cool. In a mixer or a bowl, mix the sourdough starter, water, oil and honey. Once they are well mixed pour in the cooled seeds and incorporate the seeds. Stir in the flax flour or flax meal. Then stir in flour one cup at a time. Do not over flour the dough. Take the dough out of the mixer or bowl and place it on a floured surface and knead for 5 minutes. The dough should be a little sticky. Place dough into a oiled bowl, making sure the dough is oiled on all sides. Then cover till doubled in size. Deflate the dough, knead briefly, cut and shape into rough loaves. Let the dough sit, covered, for 30 minutes, then shape into final loaves. Let rise, covered, until doubled. Place into a preheat oven at 375F. Bake 30 to 45 minutes.
