Brown Gluten Free Bread Recipe 2: Makes 2 loaves

Ingredients

  • 1 1/2 cups bean flour
  • 1 1/2 cups brown rice flour
  • 1 cup corn meal
  • 1/2 cup sugar
  • 1 teaspoon xanthum gum
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk or applesauce
  • 1 cup molasses
  • 1 cup raisins

Method

Preheat oven to 375 degrees and lightly grease two large loaf pans. In a bowl combine the flours, corn meal, sugar, baking soda, salt and the xanthum gum. Make a well in the center of the flour and add the buttermilk or applesauce. Add in the molasses and mix till blended. Fold in the raisins. Pour into the prepared loaf pans. Bake for 50 - 55 minutes or till done. Cool on a wire rack.
