Cinnamon Raisin Gluten Free Bread Recipe: Makes 1 loaf

Ingredients

  • 2 eggs
  • 1 cup apple cider
  • 1/4 cup melted butter
  • 1 teaspoon cider vinegar
  • 1/4 cup brown sugar
  • 2 cups rice flour
  • 1/2 cup potato flour
  • 2 teaspoons xanthum gum
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons instant dry yeast
  • 2 finely chopped apples (peeled)
  • 1/3 cup golden raisins

Method

In a bowl whisk together the eggs and the apple juice. Pour the liquid into the breadmaker. Add in the melted butter and vinegar. In a bowl mix the flours, salt, xanthum gum, sugar, cinnamon, baking soda and yeast. Pour into breadmaker. Set breadmaker to basic and 1 1/2 lb. After the first kneading quickly add the the chopped apples and the raisins. After the bread is cooked allow bread to cool for 10 minutes before removing from breadmaker. Cool on a wire rack.
