Lemony Bean Bread Recipe: Makes 1 loaf

Ingredients

  • 3/4 cup flour
  • 3/4 cup whole wheat flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 3 egg whites
  • 1/4 cup packed brown sugar
  • 1 cup cooked kidney beans
  • 1/2 cup orange juice
  • 3 tablespoons oil
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract
  • 1 teaspoon grated lemon peel

Method

In a large bowl combine the flours, baking powder, grated lemon rind and cinnamon. Place the egg whites, brown sugar, kidney beans, juice, oil, vanilla and lemon extract into a blender and blend till smooth. Pour into the dry ingredients and mix till moistened. Pour into greased pans and bake for 35-40 minutes or till done. Cool.
