No Knead Oatmeal Bread Recipe: Makes 2 loaves

Ingredients

  • 2 cups water
  • 1 cup rolled oats
  • 1/3 cup butter (soft)
  • 1/3 cup honey
  • 1 tablespoon salt
  • 2 package yeast
  • 1 egg
  • 2 cups whole wheat flour
  • 2-3 cups white flour

Method

In a saucepan, heat 1 cup of water to boiling. Add in oats, butter, honey and salt. Set a side to cool to 110F. Heat remaining water to 110 F. and sprinkle yeast, allow to activate. In a large bowl combine the yeast mixture, egg , the whole wheat flour and the cooked rolled oats. Mix together till smooth. Using your hand knead in the remaining flour. Just enough to make a stiff batter. Spread batter evenly into two greased 8 1/2 X 4 1/4 inch loaf pans. Cover and let rise till double about 35 - 40 minutes. Bake in a 375 degree oven for 40-45 minutes. Remove from pans and brush with butter.
