Pumpkin Seed Quick Bread: Makes 2 loaves

Ingredients

  • 4 eggs
  • 2 1/4 cup sugar
  • 1 cup oil
  • 1 14fl oz pure pumpkin canned
  • 2 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon each of cloves, nutmeg and salt
  • 1 orange peel rind (grated)
  • 1/2 cup toasted sunflower seeds
  • 1/2 cup toasted pumpkin seeds
  • 1/3 cup dark flax seeds

Method

Place eggs, sugar and oil into a large bowl. Mix together. Add canned pumpkin. In a separate bowl combine flour, baking powder, soda, spices and orange peel. Mix together. Add liquid to dry ingredients. DO NOT OVER MIX. Divide batter into two large greased loaf pans. Smooth the tops with a spatula. Bake for 60-70n minutes in a pre-heated over at 350 F.
