Apricot Pumpkin Quick Bread Recipe: Makes 2 loaf

Ingredients

  • 1 1/2 cup canned pumpkin
  • 1 cup sugar
  • 1 cup oil
  • 3 eggs
  • 2 1/4 cup flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 3/4 teaspoon salt
  • 1 (4oz) package of vanilla pudding & pie filling (NOT INSTANT PUDDING)
  • 1 1/2 cup chopped dried apricots
  • 1 cup chopped walnuts

Method

Preheat oven to 350F. Combine pumpkin, sugar and oil in a large bowl. Mix well and beat in the eggs. In another bowl mix the flour, baking soda, baking powder, cinnamon, nutmeg, salt and pudding filling. Mix in the pumpkin mixture; just till mixed. Fold in the apricots and walnuts. Pour into 2 greased and floured loaf pans (5x9) . Bake for 60 minutes or till loaf test is done. Cool on a wire rack for 10 minutes before removing. Allow to cool completely.
