Carrot Raisin Quick Bread Recipe: Makes 1 loaf

Ingredients

  • 1 cup sugar
  • 2/3 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoon cinnamon
  • 1 cup grated carrots
  • 1 cup golden raisins
  • 1/2 cup chopped pecans

Method

Sift together the flour, baking soda, baking powder, salt and cinnamon. In another bowl combine the sugar, oil and eggs. Mix together with an electric mixer till creamy. Add the dry ingredients and mix till combined. Fold in the carrots, raisins and the pecans. Pour batter into a well greased loaf pan and bake at 375 for 50 - 55 minutes. Cool for 10 minutes before removing from pan. Cool on a wire rack.
