Cherry Quick Bread Recipe: Makes 2 loaves

Ingredients

  • 8 oz. package cream cheese
  • 1 1/2 cup granulated sugar
  • 1 cup butter
  • 1 teaspoon almond flavoring
  • 4 eggs
  • 2 1/4 cup cake and pastry flour
  • 1 1/2 teaspoons baking powder
  • 1 cup red maraschino cherries chopped
  • 1 cup green maraschino cherries
  • 1/2 cup ground almonds
  • 1/2 cup icing sugar
  • 1 tablespoon milk

Method

Blend cream cheese, sugar, butter and almond flavoring. Add eggs one at a time and beat. Gradually add 2 cups of flour and baking powder to the batter. Mix in remaining flour with the chopped cherries and ground almonds. Fold fruit mixture into batter. Divide between two greased 9 X. 5 loaf pans. Bake at 325 degrees for 1 1/2 hours. Mix icing sugar and milk to thin glaze. Drizzle over loaves while still warm.
