Cinnamon Pear Quick Bread Recipe: Makes 2 loaves

Ingredients

  • 2 (16oz) cans of pears (drained and chopped)
  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • 1/2 teaspoon grated lemon
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 1/2 teaspoon cinnamon
  • 1 cup chopped pecans

Method

Preheat oven to 325 degrees. In a bowl combine the pears, eggs, oil, sugar, grated lemon rind and vanilla. Mix together with a spatula . Sift together the flour, salt, baking soda, baking powder and cinnamon. Add the flour mixture to the liquid mixture. Stir till well mixed. Fold in the pecans. Pour into 2 greased 5 by 9 inch loaf pans. Bake for 1 1/4 hours or until a knife inserted in the center comes out clean.
