Corn Bread Quick Bread Recipe: Makes 1 Dozen

Ingredients

  • 1 cup stoneground cornmeal
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup sweet milk
  • 1 egg
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup melted shortening

Method

Mix cornmeal, flour and salt together thoroughly. Now add the rest of ingredients together without and mix. Grease individual muffin tins. Heat the empty muffin tins in the oven until it is extremely HOT. DO not let it smoke. Remove from the hot oven and pour the batter into the individual tins. fill only 3/4 full. Bake the corn bread in a pre-heated 450-degree oven until done. The corn bread will be wonderfully moist in the center and brown on the bottom and the top.
