Fruity Pumpkin Quick Bread Recipe: Makes 2 loaves

Ingredients

  • 3/4 cup butter
  • 1 1/4 cup sugar
  • 3 eggs
  • 3/4 cup canned pumpkin
  • 3/4 cup mashed ripe banana
  • 1/2 cup golden raisins
  • 3 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 cup chopped pecans

Method

Place the butter and sugar into a bowl and cream together. Add in the eggs one at a time being sure to mix well between each egg. Stir in the pumpkin and mashed banana. Stir in the flour, soda, salt and the rest of the spices. Mix just till blended. Add in the pecans and raisins. Pour into 2 well greased large bread pans. Bake in a preheated 350 F oven for 50 - 60 minutes. Allow to cool for ten minutes before removing from pans.
