Lemon Yogurt Quick Bread Recipe: Makes 2 loaves

Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 3/4 cups sugar
  • 3 eggs
  • 1 cup oil
  • 2 tablespoons lemon extract
  • 1 tablespoon grated lemon rind
  • 2 cups lemon yogurt
  • 3/4 cup chopped almonds

Method

Preheat oven to 325F. In a bowl combine the flour , salt, baking powder, baking soda and sugar. Mix till blended. Add the eggs, oil, lemon extract, lemon rind, yogurt and mix till moistened. Fold in chopped almonds. Pour batter into 2 greased 5 by 9 loaf pans. Bake for 45 - 60 minutes. Cool for 10 minutes before removing from pans. Then cool completely.
