Lime Quick Bread Recipe: Makes 1 loaf

Ingredients

  • 6 tablespoons soft butter
  • 1 cup sugar
  • 2 tablespoons of grated lime peel
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup half and half
  • 2/3 cup pecans

Method

In a bowl cream the butter and sugar together with an electric mixer or spoon. Add in the eggs one at a time till well mixed. Add the grated lime and blend. Sift in the flour, salt and baking powder alternating with the half and half cream. Do not over mix. Fold in the pecans. Turn into a greased 9x5 inch loaf pan. Bake at 350 degrees for 1 hour. Cool for 5 minutes then remove from pan.
