Peppercorn Quick Bread Recipe: Makes 1 loaf

Ingredients

  • 1 cup melted butter
  • 3/4 cup buttermilk
  • 1 1/2 cups cream corn
  • 1 cup cornmeal
  • 1 large onion
  • 2 eggs, beaten
  • 1/2 teaspoon baking soda
  • 1 1/2 cups cheddar cheese, grated
  • 3 hot peppers, chopped

Method

In a mixing bowl , combine the butter, buttermilk, corn, cornmeal, onions, eggs and baking soda until well blended. Pour half the mixture into a greased 9 inch square pan. Sprinkle half the cheese, all the peppers, then the remaining cheese. Pour the remaining batter on top. Bake at 350 F for 50 minutes. Serve warm.
