Pineapple Nut Quick Bread Recipe: Makes 1 loaf

Ingredients

  • 2 cup flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup raisins
  • 1/2 cup chopped walnuts
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 2 tablespoon melted shortening
  • 10 oz. can crushed pineapple (not drained)
  • 1 teaspoon baking soda

Method

Sift flour, sugar, baking powder and salt into a mixing bowl. Add raisins and nuts. Combine egg, vanilla and shortening. Add to mixture. Dissolve soda in pineapple and add, stir just till blended. Pour into a well greased loaf pan and bake for 1 hour or until done in a 350 degree oven. Cool thoroughly. This loaf freezes well.
