Pumpkin Nut Quick Bread: Makes 1 loaf

Ingredients

  • 2 cups sifted flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup sugar
  • 1 cup canned pumpkin
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup softened butter
  • 1 cup chopped pecans

Method

Sift first 6 ingredients. Combine pumpkin, sugar, milk and eggs. Add dry ingredients and butter. Mix well. Stir in nuts. Spread in a well greased 9x5x3 loaf pan. Bake at 350 degrees for 45 to 55 minutes.
