Raisin Bran Quick Bread 2: Makes 1 Loaf

Ingredients

  • 2 1/2 tablespoons honey
  • 1/4 cup butter
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup bran
  • 2 eggs
  • 1/3 cup brown sugar
  • 1 1/2 cups milk
  • 1 cup raisins

Method

Grease a 9x5 loaf pan and set a side. In a saucepan slowly heat the butter and honey until the butter is melted, set a side to cool.In a separate bowl sift together the flours, baking powder, salt and baking soda. Add in the bran and mix. Combine the eggs, sugar, milk butter - honey mixture and raisins. Mix thoroughly then pour into flour mixture. Mix together just till well blended. Bake in a preheated 350 degree oven for about 1 hour. Remove from oven and allow to rest for 10 minutes before removing from pan. Remove from pan and cool on a wire rack.
