Raspberry Quick Bread: Makes 2 loaves

Ingredients

  • 2 cups fresh raspberries
  • 3 1/4 cup flour
  • 2 cups firmly packed brown sugar
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/4 cups oil
  • 4 eggs
  • 1 cup chopped walnuts

Method

Grease two large loaf pans. Preheat oven to 350F. Place raspberries in a large bowl and lightly crush them. Mix the flour, sugar, cinnamon, nutmeg, soda and salt in a large bowl. Blend the oil and eggs into the fresh berries. Add the berry mixture to the flour and stir just till blended. Fold in walnuts. Pour batter into the two greased loaf pans and bake for 45 - 50 minutes. Cool loaves for 10 minutes in the pans. Then place on a wire rack.
