Sour Cream Blueberry Quick Bread: Makes 2 loaves

Ingredients

  • 4 cups sifted flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 pound butter (soft)
  • 2 cups sugar
  • 4 eggs
  • 2 cups mashed banana
  • 1 cup sour cream
  • 2 cups blueberries(fresh or frozen)
  • 1 cup chopped walnuts

Method

In a large bowl sift together flour, baking soda and salt. Set aside. Using an electric mixer combine butter and sugar. Cream together till creamy and fluffy. Add in the eggs one at a time. Be sure to blend each egg before adding the next. Add in the banana and sour cream and blend together. Switching to a spoon or spatula slowly add the flour mixture. Combine till moistened. Fold in the blueberries. Pour batter into 2 greased loaf pans. Bake at 350 degrees for 60 minutes. Check bread with a cake tester. Cool for 15 minutes then remove from pan.
