Courgette Crown Bread Recipe: Makes 1 loaf

Ingredients

  • 1 lb courgette, grated
  • 5 cups all-purpose flour
  • 2 packages instant yeast
  • 5 tablespoons grayed parmesan cheese
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • lukewarm water
  • milk for glaze
  • sesame seeds for garnish

Method

Layer the courgette in a colander and sprinkle them lightly with salt. Leave to drain for 30 - 40 minutes. Then use a paper towel and pat dry. In a bowl mix the flour, cheese and yeast together. Add in the black pepper and stir. Mix in the courgettes. Now, add in the oil and enough warm water to create a firm dough. Place the dough on a lightly floured surface and knead until smooth. Place in a clean greased bowl and cover with plastic wrap. Allow to rise for 60 minutes. Grease a 9 inch round cake pan and set aside. After dough has risen pour out and punch the dough down. Cut the dough into 8 balls. Roll each piece into a ball and place them in the cake pan. Preheat oven to 400 and bake for 25 minutes or till golden brown. Cool on a wire rack.
