
line In a large bowl pour a 1/4 cup of lukewarm water. Add a little sugar and sprinkle yeast on top. Set aside. In a bowl combine rye flour, bread flour, salt and dried onion flakes. After the yeast has foamed, add the rest of the lukewarm water and the 2 cups of starter. Add the dry ingredients to the liquid only adding 1 cup at a time. Place dough on a lightly floured surface and knead for 8-10 minutes. Afterwards place dough in a clean oiled bowl. Turn dough in the oil to lightly coat all sides of the dough. Cover with damp cloth and allow to double in size. Transfer dough to a lightly floured surface and flatten it with your hands to expel the air. Divide the dough into 2 equal parts. Roll each piece into a round shape. Cover dough with damp cloth again and allow to rise for 1 hour. Brush dough with water and sprinkle 2-3 tablespoons of dried onions on top. Place bread in a 425 F. oven for 30-35 min. or till golden brown. Cool on wire rack.
