Amber Grain Bread Recipe: Makes 2 loaves

Ingredients

  • 2 1/2 cups uncooked stone-ground seven-grain hot cereal
  • 2 cup boiling water
  • 1/2 cup pale liquid honey
  • 2 tablespoon instant yeast
  • 2 teaspoons salt
  • 1 cup lukewarm water
  • 4 cups bread flour

Method

Place the uncooked cereal into a bowl, pour the boiling water over the cereal and set aside, for 10-15 min. till cooled. In another bowl mix the honey, yeast, salt and lukewarm water together. Mix with a wooden spoon. Mix in 3 cups of bread flour and the cooked cereal. You should have a soft heavy dough. In a mixing bowl or on a lightly floured surface, knead the dough for 8-10 minutes. As you are kneading add last cup of bread flour until the dough is no longer sticky. Place in a greased bowl. Cover with a damp cloth or plastic wrap. Let dough rise till double in bulk. Punch down dough and knead for 1 minute. Divide dough into 2 sections. Place in 2 greased loaf pans. Cover till it doubles in size. Pre-heat oven to 375 F bake for 40-50 minutes. Place on a wire rack to cool.
