Irish Soda Bread Recipe: Makes 1 loaf

Ingredients

  • 1 cup flour
  • 2 cups whole wheat flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 1/3 cup rolled oats (not instant)
  • 1 1/2 cups buttermilk
  • 2 tablespoons melted butter

Method

Preheat oven to 375 F. In a large bowl, combine flours, sugar, baking powder, soda and salt. Cut in butter until mixture resembles coarse meal. Stir in oats. Make a well in the center and add the buttermilk all at once. Stir together until moistened. Turn onto a lightly floured surface and knead gently 10 times. Shape into 6-7 inch round. Make a cross shape slash 1 inch thick into the center of the loaf. Place on a lightly buttered cookie sheet. Bake for 40 minutes or until loaf is slightly browned. Remove, place on a cooling rack over wax paper and brush with melted butter.
