Sprout Wheat Bread Recipe: Makes 2 loaves

Ingredients

  • 3 cups lukewarm water
  • 1 tablespoon dry active yeast
  • 1/4 cup unsulfered molasses or raw honey
  • 4 tablespoons unrefined oil
  • 1 teaspoon sea salt
  • 4 cups whole wheat flour
  • 2 cups wheat sprouts
  • 3 cups whole wheat flour

Method

Pour lukewarm water into a bowl. Sprinkle yeast on top and set side to activate. After the yeast has activated add the molasses or honey, oil, salt and the whole wheat flour. Mix well and leave uncovered and allow to rise for 1 hour. Add the wheat sprouts to the sponge. Add any additional flour if needed to create a kneadable dough. Knead for 8 - 10 minutes. Place into an oiled bowl and cover with a damp cloth for about an hour. Punch down dough and divide into 2 loaves. Place loaves into two greased loaf pans and cover to rise for 30 minute. Bake for 1 hour at 350 degrees.
