Sunflower Wheat Bread Recipe: Makes 2 loaves

Ingredients

  • 1 1/2 tbsp active dry yeast
  • 1/4 cup light brown sugar
  • 1 1/4 cup warm water (110F)
  • 2 1/4 cup shelled raw sunflower seeds
  • 2 1/4 cup whole wheat flour
  • 1 cup evaporated milk
  • 1/4 cup oil
  • 2 1/2 tsp salt
  • 3 to 3 1/2 cups bread flour

Method

Add half cup of warm water to a medium size bowl. Add 1/4 tsp of brown sugar and sprinkle the yeast on top. Allow to activate the yeast, it will take about 5 minutes. Place 1 1/2 cups of sunflower seeds and the whole wheat flour into a food processor and grind to a course meal. Set a side. In a large bowl add 3/4 cup of warm water, brown sugar, milk, oil, salt and the remaining sunflower seeds along with 1 cup of bread flour. Mix together, add yeast and seed-flour mixture. Mix together. Add 1/2 cup at a time of the remaining flour. Turn dough onto a lightly floured surface, and knead for 8 minutes. Place in an oiled bowl and cover for about 1 1/2 hours. Pour out dough and knead for a minute or two. Cut dough in half. Shape into 2 round loaves. Cover and allow to rise till double. After slash the top of the dough with a sharp knife. Bake in a 375 F oven for 35 - 40 minutes.
