
Preheat oven to 350F. In a large mixing bowl, mix together the eggs, oil, sugar, zucchini, apple and vanilla. In a separate bowl combine all the dry ingredients, add the mixed liquid and stir till just combined, fold in the chopped walnuts. Pour batter into two 8x4 greased loaf pans. Bake for 1 hour, remove from oven and allow loaves to cool in the pans for 10 minutes. After remove loafs and cool completely on a wire rack.
